Domestic and international flights operate into most of the major cities, and from the airport, getting into the city, or to your hotel is a simple matter of agreeing a price with a taxi driver, or getting a bus.
Renting a car is an excellent idea in Turkey, and opens up the whole country to you. On the whole, the roads are excellent, and driving outside the cities is a stress free experience, however it is far from advisable to rent a car in Istanbul, unless you like sitting in queues all day, and getting shouted at by every other driver on the roads.
