Although most famous for Sushi, Japan's cuisine is as varied and flavoursome as anywhere else you can think of. Regional specialities exist on all of the islands, and include curries and various meat dishes. Influences come from all over the world, from China to America, but the Japanese focus on individual perfection means that many recipes are unrecognisable from their origins. The Sushi bar may well be a popular choice in the evening, but also well worth looking out for is Kobe beef, a real delicacy that consists of beef from cows that have been fed only on beer throughout their lives, and has a unique taste. It is extremely expensive.
